Eggplant Soft Tacos (vegan)

How about  eggplants?

They contain a wide variety of vitamins and minerals
They disguise themselves easily behind any other veggies and take on their flavour
They're even very low in calories, if you have a big appetite

Here's an easy recipe that popped in my head with what I had on hand. I wanted to remember as I enjoyed it so much so I wrote it down:

  • Dice one big eggplant, a half onion, and a big tomato
  • Chop half a cup of parsley
  • Pour 2-3 table spoons of olive oil in frying pan
  • Start frying the egglpant and onion at low-medium heat stirring often all the way along
  • Juice 1 big lemon over the cooking veggies
  • As the onions start to soften, add 300g of ground veggie meat
  • Add half a cup of re-fried beans or canned kidney beans
  • Add the tomato and gently blend into the mixture
  • To your taste add soy sauce, chilli powder, paprika, turmeric, sea salt and mustard seeds
  • Cook until tomatoes are just cooked (not too mushy)
  • Spread wraps with hummus
  • Lay filling mixture in the center of the wraps
  • Top off with avocado slices and a parsley branch, roll up and savour
