Easy Pea-sy & Cele-rice CROCK-POT SOUP RECIPES

In this Covid-19 crisis we need to get creative as the lesser we go grocery shopping the better; this said we must opt for food items that can be preserved longer. The last couple of weeks, I've found making soup seemed quite appropriate for myself, 1. considering some of the key ingredients have a longer shelf life, 2. they are quick and easy to make, and 3. they can be frozen for a while until I want to eat them.

* Note: You might need to adjust your quantities if you have a big crock-pot!  I can pour 4 litres of water in mine, bringing the water level to an half inch from its top!

Easy Pea-sy soup

Ingredients:

1/3 of a big bunch of celery
1 big onion
1 cup of yellow peas
1 finger size turmeric root
4 medium potatoes
Celery salt
Sea salt
Miso paste
Water

Preparation:

  • Wash and dice veggies
  • Put veggies and peas in crock-pot
  • Add cold water into crock-pot to almost full
  • Grate turmeric over crock-pot and rince grater into crock-pot water
  • Add 2 tsp of miso soup paste
  • Add a half tsp (or more) of celery salt
  • Add a half tps (or more) of sea salt

 

Cele-rice soup

Ingredients:

1/2 of a big bunch of celery
3 big carrots
1 big onion
1 cup of brown rice
Sea salt
Olive oil
Water

Preparation:

  • Wash and dice veggies
  • Put veggies and rice in crock-pot
  • Add cold water into crock-pot to almost full
  • Add one tps (or more) of sea salt
  • Add 3-4 tbsp (or more) of olive oil

Cooking:

For both soups, I set up the crock-pot to high intensity for faster cooking. I made sure to keep stirring every half hour or less, and watch the soup consistencies toward the end, so the soups meet my cooking preferences. I intentionally didn't leave my pea soup cook for so long that all the peas disintegrate, but you might prefer to do that for yours. As for my rice soup, I like when the rice softens up to a point that it starts splitting and making the soup velvety.  Also, I always choose to be conservative with the salt, the miso paste and the oil I put in at first, so I prefer to wait to half way into the cooking time to taste then decide if it needs some more.

I personally like soup meals as they help me stay hydrated and are light on my stomach while I tend to stay active all day. These two soups are vegan and contain NO saturated fat which is scientifically proven to be linked to the development of heart disease.  Without going deep into the question, I would like to pin point a few good-to-know nutritional facts about the ingredients used here:

  • Peas are an excellent source of dietary fibers, protein, vitamine C and potassium, and contain a considerable amounts of vitamin B, iron and magnesium
  • Turmeric and celery have their own anti-inflammatory properties helping the protection against certain diseases such as cancer
  • Onions are a good source of potassium, and contain considerable amounts of vitamin C and fibers
  • Potatoes are an excellent source of carbohydrates (or carbs) and potassium, a good source of vitamin C, and contain considerable amounts of vitamin B and fibers 
  • Carrots are an excellent source of Vitamin A and potassium, and contain a considerable amount of fibers
  • Brown rice is an excellent source of carbs, a good source of protein, and contain considerable amounts of fibers and magnesium
